Inlet manifolds need to be complete flat as a lot use thin paper gaskets, custom made ones may require refacing due to the heat causing during tig or mig welding.
Exhaust manifolds can warp just from normal cold/hot cycles. The TD5 exhaust manifolds pictured above is are prime examples.
But again a lot of newer exhaust gaskets are a MLS type which are very thin and require the manifold to be completely flat to seal correctly.
